Wisconsin Cheese Factories Increase Production

Wisconsin cheese factories were back to producing more product in November after seeing its first year-to-year drop in nine month during October.
According to the latest dairy product summary from the USDA, the state produced 278.7 million pounds of cheese during the month. That was 1.1 percent more than last year, but 3.7 percent lower than this past September, which had more days on the calendar. Nationally, about 1.12 billion pounds of cheese was produced in the United States in November. That was a 1.6 percent increase from 2020, but 2.9 percent less compared to the amount manufactured during the previous month.
Dry Whey output in Wisconsin was recorded at 23.9 million pounds, which was up 16.1 percent from last year, and just fractionally higher compared to last month. (Wisconsin Ag Connection)
