Wisconsin Lawmakers Would Like to See Colby Cheese as the Official State Cheese Type

(Wisconsin Ag Connection) -Now that 'cheese' has been designated as Wisconsin's official state dairy product, some lawmakers would like to see Colby cheese in particular be listed as the official state cheese type.Eight state representatives and a senator have introduced a bill to make the idea a reality. They say the product was invented in the Clark County community of Colby, for which it gets its name. The proposal is being reviewed by the Assembly Agriculture Committee.
If approved, the product would be included in a list of state symbols that are published every two years in the Wisconsin Blue Book.
