Tuesday, March 5th, 2019 -- 8:04 AM

(Wisconsin Ag Connection) -Wisconsin's total cheese production was down in December when compared to a year earlier, one of only three months during 2018 when year-to-year output was negative.

The latest dairy product summary from the USDA notes that the state churned out 280.5 million pounds of cheese during the month, which was down 3.9 percent from a year earlier, but 1.4 percent more than this past November, which had one less day on the calendar). A 43-month streak of steady increases was broken in April 2018 and fell again during June. Nationally, about 1.09 billion pounds of cheese was produced in the United States in December.

That was 1.2 percent less than the same month last year, but 1.0 percent more than the previous month's production totals. Dry Whey output in Wisconsin was recorded at 23.8 million pounds, which was down 20.1 percent from last year, but 5.4 percent more compared to last month.
