54th Annual June Dairy Month Recipe Contest Winners

-The 54th annual June Dairy Month Recipe Contest was held on June 17 at Loyal City Hall. This year the theme was "Party Appetizers" and there were 21 entries.The winning recipe was "Wisconsin's Hot Rueben Dip" submitted by Shannon Toufar of Loyal. As the winner for this contest Shannon will be the chairperson for next year's recipe contest and will have the honor of choosing the theme for the year.
The top 10 recipes will be put into a recipe booklet and will be available to the public after July 18th. Please send your request and a self-addressed, stamped envelope to the UW-Extension Office.
Thank you to Loyal City Hall for the use of their facility, Mary McGuire, Claudean Lezotte, and Rick Szymanski for judging this event, Clark County UW-Extension for organizing this event and Clark County Dairy Promotion for hosting this event.
Winners are Shannon Toufar (1st), Lois Becker (2nd), Betty Durham (3rd), Maryanne Olson (4th), Devani Hinkelmann (5th), Chester Johnson (6th), Avis Becker (7th), Sierra Koski (8th) Marie Kaiser (9th) and Jean Koski (10th).
Here's the winning recipe:
Wisconsin's Hot Rueben Dip
1 ? 8 ounce package cream cheese, softened
1/2 cup sour cream
2 tablespoons ketchup
1/2 pound deli corned beef, finely chopped
1 cup sauerkraut, chopped, rinsed, and drained
1 cup (4 ounces) shredded Swiss cheese
2 tablespoons onion, finely chopped
Plain bagel chips
1. In a mixing bowl beat cream cheese, sour cream, and ketchup until smooth.
2. Stir in corned beef, sauerkraut, Swiss cheese, and onion until blended.
3. Transfer to a small crock pot. Cover and cook for 30 minutes.
4. Serve warm with bagel chips.
